Hot and Sticky Prawns

Hot and Sticky Prawns – A finger licking starter that can be made with any spicy sauce. We recommend a tasty sambal sauce for a perfect marriage with seafood.

Ingredients:
  • 10 Large raw peeled tiger prawns
  • 1 tsp Harissa, sambal or chilli sauce
  • 2 tsp Clear honey
  • 2 Small handfuls of watercress
  • 1 Lime
Preparation:
  1. Dry off the prawns on a piece of kitchen roll.
  2. Make up the marinade of the honey mixed with harissa paste and add prawns, ensuring that they are covered evenly.
  3. Cover and leave in a small bowl in the fridge to marinade for at least 30 minutes.
  4. Preheat your grill to high and thread the prawns onto short skewers.
  5. Grill for 5 minutes, drizzle on any marinade left and turn just once.
  6. Remove the skewers and serve with some watercress and a lime wedge.
Notes: Harissa is a mix of chillies, garlic, cumin, coriander and tomatoes. In this case, it may be substituted with a sambal or chilli sauce for a more oriental flavour, if you prefer.
