Sticky rice (Thai Pulot) with Mango

This simple dish, called Thai Pulot, combines delicious flavour of fresh mangoes with creamy and aromatic coconut rice.

Ingredients:
Preparation:
  1. Soak the rice for at least 3 hours. Drain.
  2. Place rice in a steamer and top up with water up to 1cm above rice. Steam for 20 minutes until cooked.
  3. Put aside 4 tablespoons of the coconut milk to garnish.
  4. Dissolve the sugar and salt in the remaining coconut milk and stir into the cooked, hot rice.
  5. Leave the coconut rice to stand for 10 minutes.
  6. Peel the mangoes and slice lengthways to get two large pieces. Cut the two pieces into cm slices and arrange onto plates.
  7. Arrange a scoop of coconut rice beside each mango and drizzle the retained coconut milk over the mangoes and rice.
Notes: Ensure that you leave enough time to soak the glutinous (sticky) rice before using in this recipe! For a dramatic flourish to this simple but delicious dish, try garnishing with an orchid flower on each plate!
