Tasty Tamarind Prawns (Udang Goreng Assam)

These tasty tamarind prawns make a great starter and will have everyone asking for more!

Ingredients:
  • 600g Medium-large size prawns (shell on)
  • 2 tbsp Tamarind
  • 30ml Water
  • 1 tsp Table salt
  • ½ tsp Pepper
  • ½ tsp Sugar
  • Oil for frying
Preparation:
  1. Blend the tamarind with the water. Strain the mixture to get a thick paste.
  2. Mix the tamarind, salt, pepper and sugar and cover the prawns with the mixture. Leave to marinate for 10 minutes.
  3. Deep fat fry the prawns in hot oil for a couple of minutes until the shells are crisp.
Notes: If using frozen prawns, ensure that they are fully defrosted. This dish is typically served with cooling cucumber cut into chunky wedges. Have some bowls with hot water and slices of lemon to hand following this finger-licking dish!
