Thai Chicken Soup

This creamy Thai-inspired soup makes a great starter, or a light lunch.

Ingredients:
Preparation:
  1. Cut the chicken into small bite size pieces. Peel and finely chop the galangal. Chop the lemon grass into fine diagonally sliced pieces.
  2. Heat the stock, add the lime leaves, galangal and lemon grass.
  3. When well-mixed, bring the stock to a simmer and add the coconut milk, fish sauce,sugar and lime juice. Keep stirring and bring back to a simmer.
  4. Now add the chicken pieces and simmer for around 5-7 minutes until cooked.
  5. Just before serving into warm bowls you can add the optional chillies with the final stir.
Notes: If you don't have access to fresh Thai herbs, why not try frozen or dried herbs instead?
