Recipe for Black eye beans curry:
Ingredients: 500g black eye beans, 2 tbs vegetable oil, 3 large sliced onions, 2 large chopped tomatoes, 2tbsp garlic paste,1 tbsp of ginger paste, 2tsp coriander powder, 1tsp cumin powder, 1/2 tbsp red chilli powder, 1/2 tsp turmeric powder, 2tsp garam masala powder, 1/2 tbsp tamarind paste, 1 piece of finely sliced ginger, handful fresh finely chopped coriander leaves, salt to taste.

Method: Soak the beans overnight which pressure cook them ensuring they're not overcooked. Set aside. Grind 2 onions, tomatoes, ginger paste and garlic paste into a smooth paste.

Heat the vegetable oil in a deep pan on a medium flame. Add the remaining onion into the heated vegetable oil a fry until lightly golden. Add the onion-tomato paste and fry until oil begins to separate from the paste. Add the tamarind paste and mix together. Add the cumin powder, coriander powder, red chilli powder, turmeric powder, and garam masala, stir in and cook for 5 mins. Add the boiled black eye beans into the mixture and stir together. Add salt to taste and some water to create a gravy. Simmer and cook covered for 10 mins. Mix again, garnish with chopped ginger and coriander leaves and serve hot with chapatti, naan, bread or rice.
