Description:Heera Pink Peanuts

Recipe for prawn and peanut salad:

Ingredients (for the paste):
3 bird's eye chillies, 2 garlic cloves, 1 tbsp shrimp paste, 3 peeled tomatoes, 1 stalked and chopped lemongrass, 1 tbsp palm sugar
Ingredients (for the salad): 150g rice noodles, 100g pink peanut, vegetable oil, 6 finely sliced shallots, pinch of sea salt, juice of 2 limes, 1 tbsp fish sauce, 200g cooked and peeled king prawns, 100g cooked shrimp, 1 finely sliced pepper, handful of mint and coriander.

For the paste, blend all ingredients in a food processor until smooth. For the salad, heat 2 tsp oil in frying pan and toast the peanuts for 5 minutes. Cook noodles according to packet instructions. Heat 1 inch oil in heavy bottomed pan Once oil is hot add shallots and stir for 5 mins until golden brown. Once cooked, remove from pan and drain on kitchen paper. Sprinkle with sea salt. In a bowl mix noodles, lime juice and fish sauce. Add paste, prawns, shrimp and pepper and mix until well combined. Scatter the fresh herbs, roasted peanuts and crispy fried shallots over the top and serve.

Once opened we recommend transfer of product to an airtight container.
Store in a cool dry place, away from strong flavours.
