Description:Red curry (Kaeng Ped) is the all-time favourite curry. The combination of Thai dried red chilli, exquisite herbs and spices enhances the unique aroma and natural flavour to this cuisine.

Red Curry
Preparation (Serves 5):
1 pack Maesri's Red Curry Paste, 4 cups coconut milk, 500g chicken or preferred meat, 2-3 tbsp fish sauce, 250g cut eggplants, (carrot, bamboo shoots or preferred vegetables), 5 torn kaffir lime leaves, sweet basil leaves and fresh chillies for garnishing
Cooking Instructions:
1. Stir-fry 1 pack of Maesri's Red Curry Paste with 2 cups of coconut milk in a saucepan for a few minutes under medium high heat until well mixed and boiled
2. Add the preferred meat and stir until meat is cooked. Add 2 cups of coconut milk. Bring to a boil
3. While boiling, add eggplants or preferred vegetables, kaffir lime leaves and fish sauce
4. Garnish with sweet basil leaves and sliced fresh chillies
Delicious when served with rice, noodles, pasta or paratha.

Store in a cool dry place. Avoid direct sunlight.
