Shanxi Mature Vinegar (Shanxi Lao Chengcu) is known as one of China's famous vinegar. It's recipe originated in 770BC and it has been enjoyed by Chinese gourmet lovers for over 3,000 years. The whole natural fermentation process of this vinegar takes over one year, the end product is famous for its brown-red colour, strong fragrance and a mellow sour taste. It is used primarily as a seasoning in food and salad dishes. It is also 100% natural and completely chemical-free.
