Prepared from rice by fermentation. Amoy Rice Vinegar is an indispensable ingredient for making Sweet & Sour dishes. Try is for pickling red & green peppers, ginger and cucumber or as a base for cold dishes, both meat and vegetables.

Lemon Chicken
Chicken drumstick 454g, 1 lemon (sliced), sprinkle of corn flour
Amoy light soy sauce 1 tbsp, sugar ½ tsp, corn starch 1 tbsp, egg (beaten) 1 tbsp, sprinkle of pepper
Amoy white rice vinegar 1 tbsp, sugar 6 tbsp, sprinkle of salt, water 185 ml
Thick Sauce:
Corn starch 1½ tsp, water 1 tbsp

Cooking Methods:
1. Rinse and slice the chicken, then marinate for 30 minutes
2. Dip the chicken slices in corn starch, pan fry over medium heat until turning a golden brown colour. Deep fry until crispy. Ensure fully cooked
3. Pour seasoning over lemon slices and cook for 2 minutes. Then cook with thick sauce until warm. Pour on top of the fried chicken and serve.
Ensure fully cooked before serving.

Close the lid tightly, store in cool and dry place after use.
