Pad Thai is a global ambassador of Thai food. Its name literally means Thai-style stir-fried rice noodles. Flavours like tamarins, palm sugar, and chillies were the Thai twists. During the recession following World War II, the post-war government of Field Marshal Plack Phibunsongkhram as part of his campaign to foster a sense of national identity. By releasing a Pad Thai recipe and promoting it, Plack turned one potential take on stir-fried noodles into a national dish. Within several years, Pad Thai has become the famous local Thai street food.

Preparations per serve:
50g Rice noodles (1 piece)
50g peeled, deveined shrimp, optional
30g bean sprouts
2 tbsp vegetable oil, or as needed
30g Pad Thai sauce (1 pack)
1 egg, beaten slightly
3g spring onions cut to 3cm long

Simple steps of cooking
1. Bring about 500ml of water to boil.
2. Add the rice noodles and cook until tender for about 4 minutes, but not too soft. Drain the rice noodles at once and rinse thoroughly with cold water to stop the cooking. Drain and set aside.
3. Heat the oil in a saucepan over medium-high heat. Add the shrimp and stir fry until it is cooked through. Push the cooked shrimp to one side of the pan.
4. Add the beaten egg to the space created in the pan; spread it with a spatula to beginning cooking. Add the noodles and sauce, stir fry for 30 seconds. Fold in bean sprouts and spring onions, allow cooking for 10 second before beginning to stir-fry the noodles and mixture through. Serve immediately.

Store in a cool dry place.
