Singapore style noodles are a favourite in Chinese-American restaurants. The dish is lightly seasoned with Indian curry powder, giving the rice vermicelli a beautiful hue. The curry flavour explains the dish name: Singapore cooking exhibits a significant Indian influence. This popular rice noodles dish moved up Malay Peninsula to Chine and became an important part of Chinese cuisine. You may apply this Mama Meal Kit with your leftover roast pork, shrimp and peas to make a colourful delicious dish.

Preparations per serve:
50g Rice Vermicelli (1 piece)
25g Singapore style sauce (1 pack)
25g sliced chicken
25g shrimp peeled, deveined
15g carrot cut into thin strips about 3cm long
1 egg beaten lightly
15g bean sprouts
10g sliced spring onions
2 tbsp vegetable oil

Simple steps of cooking
1. Bring about 500ml of water to boil.
2. Add the rice vermicelli and cook until tender for about 1 minute, but not too soft. Drain the rice vermicelli at once and rinse thoroughly with cold water to stop the cooking. Drain and set aside.
3. Heat the oil in a saucepan over medium-high heat. Add the chicken, shrimp and stir fry about 1 minute. Push the cooked chicken and shrimp to one side of the pan. Add the beaten egg to the space created in the pan; spread it with a spatula to beginning cooking. Add the rice vermicelli and sauce, stir fry for 30 seconds. Add in carrot, bean sprouts and sliced spring onion. Stir fry the noodles and the mixture through for about 2 minutes. Serve immediately.

Store in a cool dry place.
