Korean Noodle Salad
1. Slice your choice of meat into strips. Marinade in teriyaki sauce and setaside. Slice rehydrated shiitake/winter mushrooms and season with soy sauce and sugar.
2. Wash and blanch spinach in boiling water, drain then squeeze out the water. Season with sesame oil and salt.
3. Slice an onion and a carrot into strips, then stir fry with a little salt.Set aside when cooked.
4. Separate an egg, then spread the yol and the white separately onto a pan to make yellow and white egg crepes. Slice into long strips when cooked.
5. Stir fry the meat and mushrooms from earlier.
6. Cook the sweet potato noodles in boiing water for 6 minutes. Rinse in cold water and drain. Boil 12 tbsp of soy sauce, 1 cup of water, 8 tbsp of sugar, 2 tbsp sesame oil, 1 tsp black pepper and 2 tsp of roasted sesame seeds in a deep frying pan. Add the cold noodles to the pan and stir fry on a low heat until the noodles have absorbed some of the sauce.
7. Combine all of the ingredients in a bowl. Serve.
