Description:Mong Lee Shang Rice Sticks (Mei Fun)

Taiwanese Style Fried Vermicelli
100g dried rice stick, 20g dried shrimps, 1 spring onion, 20g beansprouts, 3 mushroom, 20g carrot, 100g cabbage, 100g shredded pork, seasoning (3 tsp light soy sauce, 1/2 tsp salt, 1/2 cup water)
Cooking Method:
1. Soak dried shrimps and mushrooms till soft. Chop spring onion finely, cut mushrooms, peeled carrot and cabbage into shreds
2. Heat 2 tsp of oil, fry spring onion and dried shrimps until fragrant. Stir in mushrooms, pork, carrot, cabbage, seasoning and mix well. Add 1 1/2 bowls of water, then add rice stick and beansprouts and stir well. Stew till dry and serve

Rice Sticks With Shredded Roast Duck In Broth
160g dried rice stick, 120g roast duck fillet, 1 tsp shredded red chilli, 80g soaked suetchoi, straw mushrooms, 2 cups chicken broth or 2 1/2 cups water, sauce (3/4 cup water, 2 tsp light soya sauce, 1 tsp sugar, 1 tsp corn starch)
Cooking Method:
1. Bring chicken broth and water to a boil, season to taste with a little salt. Cook rice stick for 2 minutes, transfer to tureen
2. Heat 1 tbsp oil, saute suetchoi, add mushrooms and sauce, bring to a boil and add roast duck. Cook together with shredded chilli
3. Pour over rice stick in the tureen to serve

Storage: Keep in a cool and dry place.
