Coconut Rice Fritters These tasty little coconut fritters are great as a dessert or served as a snack with coffee or hot chocolate. Makes 28.Ingredients:150g Cooked long grain rice2 tbsp Coconut milk powder3 tbsp Sugar2 Egg yolksJuice of ½ lemon75g Desiccated coconutOil for deep fryingIcing sugar to dustPreparation:Cook all the rice as per packet instructions and put half in a food processor mixing until smooth and sticky.Transfer to a bowl and add the rest of the rice, sugar, egg yolks, lemon juice, and coconut milk powder.Combine mixture well.Now, with wet hands divide this mixture into thumb size pieces and roll them in the desiccated coconut to give neat little balls.Heat the oil in a wok to 180°C/350°F and fry in batches of 3 – 4 for about 2 – 3 mins until the coconut is nicely browned.
