This traditional Hokkien dish is even better when prepared the day before serving. This slow-cooked dish results in melt-in-the-mouth pork that is irresistible.

Cut the pork into 2½cm (1 inch) cubes and marinate in the dark soy, light soy, sugar and pepper. Leave the meat to marinate for 30 minutes.
Heat a wok on low heat. Add the oil, and once hot, fry the garlic lightly for 1 minute. Add the meat and stir fry over a medium heat for a few minutes.
Add the shiitake mushrooms to the wok and stir fry for 1 minute before adding 125 ml of water and simmering. Continue to stir frequently, adding water as required.
Add boiled chestnuts and stir in to heat through.
Notes:
Shiitake mushrooms need to be soaked in water for at least a couple of hours before they may be used.
