Kanom Jeeb (Thai Style Siu Mai Dumplings) Why not try making your own steamed siu mai dumplings? These are great as dim-sum, or as a starter! Ingredients: 16 Wonton wrappers 6 Large shelled prawns 125g Minced pork 40g Onion 2 Cloves Garlic 5 Water chestnuts 1 tsp Light brown sugar 1 tbsp Light soy sauce 1 egg Soy Vinegar Sauce 3 tbsp Chinese rice vinegar 3 tbsp Dark soy sauce 1 tsp Caster sugar 2 Small red chillies finely chopped Preparation: Chop the onions a little and then mix all the ingredients together in a blender or food processor. Make 16 little portions of an even size, about a teaspoon each. Put each portion onto the centre of a wonton wrapper placed over your thumb and index finger. As you push the filled wrapper down through the circle your fingers form, tighten the top, shaping it but leaving the top open. Repeat this process with all the wrappers. Put the dumplings onto a plate and put inside a steamer Drizzle a little oil on the top of the dumplings, put the lid on and steam for 30 mins. Make your dipping sauce by simply mixing all the ingredients in a bowl until the sugar has dissolved. Notes: There are many types of rice vinegar. This recipe uses a white rice vinegar, but you may want to try another type for a different taste!
