Quick & Easy Pork and Sweetcorn

If you have little time for cooking after a hard day’s work, this quick and easy recipe means that you have one less thing to worry about. Requiring very little effort but offering maximum taste, this easy pork and sweetcorn dish is perfect for someone who is always on the go.

Ingredients:

  1. Cut the pork into thin slices and place in a bowl.
  2. Add the marinade ingredients to the pork (including 1 tsp of the vegetable oil), mixing throughly and ensuring that all of the meat is well covered.
  3. Heat your pan to medium heat and add the remaining vegetable oil.
  4. Place the marinated meat into the pan. Separate and seal the meat strips on all sides.
  5. Now add the cream corn and water to the pan. Bring the pan to the boil, stirring well, before turning down to a low-medium heat to simmer gently for a further 5 minutes.
  6. You can tweak the consistency of the dish by altering the amount of water added, or by boiling off excess water on a high heat.
  7. Season the cream corn mixture with the salt and white pepper and stir in before serving.
  8. To serve, place a bed of rice on a plate and spoon the cream corn mixture on top.
Notes: This recipe uses pork, but may just as easily be made with chicken and is typically served on a bed of freshly cooked rice. Due to the sticky nature of cream corn, you may find it easier to cook this in a non-stick frying pan than a stainless steel wok, but both are perfectly acceptable. Why not try injecting a little extra colour into this dish by adding some peas and diced red pepper when it is almost cooked?
