Spicy Indonesian Chicken Wings (Ayam Goreng)

These spicy chicken wings will have everyone asking for more! The spiciness of this dish may be toned down by excluding some of the chillies.

Ingredients:
Preparation:
  1. Massage the salt and sugar into the chicken wings and leave to sit whilst preparing the rempah (spice mixture).
  2. Add the chillies, turmeric, galangal, black peppercorns, garlic and shallots into a large saucepan with the lemongrass and coconut milk. Bring the mixture to the boil, stirring constantly.
  3. Add the chicken wings and simmer for 20 minutes, stirring occasionally.
  4. Remove the chicken from the pan and drain before deep-frying until golden and crispy. Drain the wings and set aside.
  5. Continue to simmer the coconut gravy over a medium heat to thicken.
  6. Serve the wings stacked up on a plate with the gravy in a separate bowl.
Notes: This recipe uses Birdseye chillies, which are generally very hot. Birdseye chillies are also known as bird chillies.
