Sweet and Sour Pork with Apricots

This pork dish balances the sweetness of apricots with a delicious sweet and sour sauce. Perfect, served on a bed of fluffy jasmine rice!

Ingredients:
  • 450g Pork fillet, cut into 0.5cm slices
  • 2 tbsp Seasoned flour
  • 2 tbsp Vegetable oil
  • 1 x 396g Can apricot halves
  • 2 tbsp Demerara sugar
  • 2 tsp Vinegar
  • 1 tbsp Lemon juice
  • 8 tbsp Water
Preparation:
  1. Drain the apricots, retaining the juice.
  2. Mix the sugar, vinegar, lemon juice and water with the juice from the apricots. This will form the basis of the sauce.
  3. Chop the apricot halves up, leaving a few to garnish at the end.
  4. Dip the pork pieces in the seasoned flour and ensure they are fully covered. Set aside the remaining flour.
  5. Fry the pork until lightly browned. Add the remaining flour to the pan.
  6. Add the sauce and chopped fruit and bring to the boil, stirring.
  7. Cover and simmer for 10 minutes.

This simple sweet and sour is now ready to serve!

Notes: This recipe can be spiced up a bit by including 2 tbsp of chilli sauce or Worcestershire sauce, or perhaps try 1 tsp of grated ginger.
