Tasty Fish Parcels

A spicy Thai-inspired dish that is high in flavour but low on fat. By steaming the fish in parcels, the goodness and flavour of the ingredients is retained.

Ingredients:
Preparation:
  1. Pre heat your oven to 200°C (gas mark 6)
  2. Skin and cut the 4 plaice fillets into two slices (or ask your fishmonger to do this)
  3. Prepare the chilli by chopping finely and removing seeds. Chop the coriander. Zest the lime and squeeze the juice and place to one side.
  4. Finely slice the leeks and slice the pak choi. Stir fry until just beginning to wilt. Divide between 4 squares of foil and lay two pieces of the fish on the top.
  5. Mix the fish sauce, lime zest and juice, chilli and soy sauce together and pour over parcels.
  6. Close up the parcels and bake in the centre of your oven for 10 minutes. Let them sit for a minute and then open and scatter the chopped coriander over.

Serve on a bed of freshly cooked noodles with a wedge of lime.
