Thai Lamb Salad

An unusual salad with punchy herbs and fish sauce, which makes a quick and delicious meal.

Ingredients:
  • 12 Shallots
  • 150 g Cherry tomatoes
  • Fresh coriander
  • 450 g Lamb fillets
  • 2 tbsp Dark soy sauce
  • 1 tbsp Thai fish sauce
  • 1 tsp Soft brown sugar
  • 1 Garlic clove
  • Juice of one lime
  • 2 tbsp Chopped roasted peanuts
Preparation:
  1. Prepare the salad by chopping shallots, tomatoes and herbs and arranging on serving plates
  2. Prepare dressing by mixing sauces, finely chopped garlic, sugar and lime juice.
  3. Grill the lamb, turning once for approx 10 mins or to your liking, slice the meat and arrange on top of the salad.
  4. Spoon the dressing over and scatter on the peanuts.
Notes: Thai fish sauce can provide an authentic oriental flavour to dressings for both salads and pasta.
