Coconut Rice Fritters

These tasty little coconut fritters are great as a dessert or served as a snack with coffee or hot chocolate. Makes 28.

Ingredients:
Preparation:
  1. Cook all the rice as per packet instructions and put half in a food processor mixing until smooth and sticky.
  2. Transfer to a bowl and add the rest of the rice, sugar, egg yolks, lemon juice, and coconut milk powder.
  3. Combine mixture well.
  4. Now, with wet hands divide this mixture into thumb size pieces and roll them in the desiccated coconut to give neat little balls.
  5. Heat the oil in a wok to 180°C/350°F and fry in batches of 3 – 4 for about 2 – 3 mins until the coconut is nicely browned. Transfer to a plate to cool.
  6. Dust with icing sugar and pop a little wooden skewer into each fritter.
Notes: This makes a delightful afternoon snack with coffee and cakes.
