Liver Indonesian Style
This recipe is a exotic and flavoursome alternative to liver and onions!
Ingredients:
2 tbsp Cooking oil
170g Onions
1 tsp
Ground coriander
½ tsp
Garlic flakes
½ tsp
Crushed chillies
¼ tsp
Ground turmeric
454g Liver
1 tbsp
Soy sauce
1 tbsp
Smooth peanut butter
½ tsp Salt
285 ml
Coconut milk
Preparation:
Slice the onion into rings and the liver into thin strips.
Heat the cooking oil in a frying pan and gently heat the onions until lightly browned.
Set aside half of the onions and keep warm to use as a garnish at the end.
Add the garlic, turmeric, coriander and chillies to the remaining onions and cook gently for another minute.
Add the liver and cook until browned. Stir in the soy sauce, peanut butter and salt.
Blend in the coconut milk then bring to the boil stirring constantly, turn the heat down, add a lid and simmer for 30 minutes.
Place in a warmed serving dish and garnish with reserved onions.
Notes:
Serve with rice. A nice touch is to add colour by adding a small pinch of saffron or turmeric at the start of cooking.
