Spicy Steak
This spicy, tangy sauce is a different take for a good grilled steak.
Ingredients:
2 x 250g Steak
1 Tomato
1 Small red onion
2 tbsp
Ground dried chilli
12 tbsp
Fish sauce
4 tbsp
Tamarind
water
2 tsp Light brown sugar
2 tsp Ground roast rice*
2 tbsp Chicken Stock
Garnish
Basil leaves
Coriander leaves
Flat parsley
2 Chillies
Preparation:
Chop the tomatoes and red onion very finely.
Prepare the ground roast rice* by dry frying the uncooked rice. Using no oil, shake it around keeping it on the move until it is a lovely golden colour. Remove from the heat and cool off and grind using a pestle and mortar or an electric grinder.
Mix all the ingredients together in a bowl or jug ready to pour over your steak.
Grill your steak under hot grill (or pan-fry on medium-high heat).
Serve on warm plates on a bed of basil, flat leaf parsley, coriander leaves and chopped chillies. The steak may be served whole, or sliced into pieces that may be easily picked up using chopsticks. Pour over the dressing/sauce.
Notes:
Tamarind water may be made using tamarind pulp, or concentrated tamarind juice. Lime juice may be used as a substitute.
