Tuna Noodles

Noodles perked up with the addition of coriander, served with tuna, complete as steaks or chopped and popped on top.

Ingredients:
Preparation:
  1. Prepare the dressing by mixing the lime juice, fish sauce, sugar, seasoning, sesame oil and finely chopped garlic.
  2. Thinly slice the spring onions and roughly chop the coriander.
  3. Heat the olive oil in a griddle pan to a high heat and sear the tuna for 2 minutes on either side. Transfer the tuna steaks to a covered warm dish and keep to one side.
  4. Heat a large pan of salted water to boiling, add the noodles and cook for 4 minutes. Drain well. Add half the dressing and half the spring onions and coriander to the drained noodles and mix well.
  5. Serve the tuna on the bed of noodles. Drizzle the rest of the dressing mixed with the onions and coriander over the top.
Notes: Garnish with lime wedges and a sprinkle of toasted sesame seeds.
