Satay Skewers

Perfect for barbecue season, these aromatic skewers are best served with cool chunks of cucumber and peanut sauce.

Even without a barbecue, these make great finger food for parties as they can be cooked under the grill!

Ingredients:
Preparation:
  1. Lightly roast the coriander and cumin seeds in a pan for a minute or two to release the flavours. Keep the pan moving to ensure that they spices do not burn.
  2. Ground up the seeds using a pestle and mortar. If seeds are not available, these may be substituted with pre-ground spices.
  3. Combine the ground spices with the garlic, shallots, soy sauce, sugar, salt and pepper to taste and lime juice and mix well.
  4. Slice the meat into thin pieces. Thinner pieces of meat will allow the flavours of the marinade to sink in properly and to fully tenderise the meat.
  5. Add the marinade to the meat and ensure that the meat is evenly covered. Leave to marinate for as long as possible - preferably overnight.
  6. Thread the marinated meat onto skewers. If using wooden skewers, soak in water first so that they won't burn.
  7. Grill skewers on the barbecue or under a hot grill, occasionally basting with the oil if required.
  8. Serve with peanut sauce (see below) and cool cucumber cut into chunks.
