Sticky Rice Mango Pudding

Have you got a sweet tooth? In this delicious classic Thai dessert, sticky rice and fresh mango make a nice partnership.

Ingredients:
Preparation: Drain and rinse your rice well, be sure to use glutinous rice. Cook in a steamer for about 30 minutes. Meanwhile mix the sugar and coconut milk by stirring well in a large bowl. Add the cooked rice and mix well for about 2 – 3 minutes so that you arrive at a very creamy consistency Cover with a lid and leave at room temperature for 30 minutes. Slice your mangoes, chopping odd pieces smaller and mixing in the rice just before you serve. Decorate using full slices of mango arranging them attractively round a large serving dish or individual bowls.
Notes: Useful to have a can of mango slices in along with rice and coconut milk store cupboard standbys you can whip up an attractive dish
