Description:Mama Sita's Kare-Kare Mix (Peanut Sauce)
Nothing is more heartwarming than a bowl of thick and savoury Kare-Kare as tender oxtail and tropical vegetables are magically brought together by achuete, toasted rice and finely ground peanuts.

Kare-Kare Recipe: (Makes 4-6 servings)
Boil 1.1lb (0.5kg) oxtail, cut until 1.5 inch length in 8 cups (2l) water. Lower the heat and simmer until meat is very tender, adding water as needed, leaving about 1.5 cups broth. In a heavy saucepan, saute 1 tsp (2.6g) minced garlic and 1 piece (40g) sliced onion in 1 tbsp (15ml) cooking oil. Add oxtail, stir-fry and pour in 1 pouch (57g) Mama Sita's Peanut Sauce (Kare-Kare) Mix dissolved in 1 cup (250ml) broth. Add the remaining broth. Stir and simmer until sauce thickens then add 1 piece (100g) eggplant sliced into 0.5 inch length, and 6 pieces (!00g) sitaw (long green beans) cut into 2 inch length. Simmer for 3 minutes more stirring occasionally. Lastly, add 7 pieces (100g) pechay (bok choy leaves) and simmer for 2 minutes or until vegetables are done.
Serve hot with bagoong (sauteed shrimp paste) and rice.

Cooking Variation: Pressure cook 1.1lbs (0.5kg) oxtail in 3 cups (750ml) of water for 45 minutes then proceed with the cooking procedures mentioned above.

Store in a clean, cool & dry place.
