Description:Heera Red Peanuts

Recipe For Chicken Stir-Fry

Ingredients:
1 chicken stock cube, 2 nest egg noodle, 2 chicken breast, 100g chopped broccoli, 1 red onion (sliced), 1 red pepper (sliced), 200g quartered mushroom, 1 clove thinly sliced garlic, 1 inch thinly sliced ginger, 2 tbsp vegetable oil, 1/2 tsp chilli flake, 2 tsp sesame oil, 3 tbsp hoisin sauce (mixed with 2 tbsp water), handful of red peanut

Method:
Boil water in a pan. Add stock cube and dissolve it in the water. Add noodles and bring to a boil. Add broccoli and boil for 2 mins. Drain and set aside. Heat 1 tbsp oil in a frying pan and roast peanuts for 5 mins. Cut chicken into strips. Heat 1 tsp vegetable in a large non-stick frying pan. Add chicken and stir-fry for 3 mins. until brown. Take the chicken out of the pan and set aside. Return pan to heat and add remaining oil. Add pepper, onion, mushroom and cook for 2 mins. Add garlic, ginger and chilli flakes and allow to sizzle for 30 secs. Add drained noodles, broccoli and chicken and stir-fry until noodles are hot. Add hoisin/water mixture and stir. Drizzle with sesame oil, garnish with peanuts and serve.
